No. Frontier's FAQ says: "While there is no multiplayer in Planet Zoo 2, players will be able to share their creations and download others' parks and blueprints via the in-game workshop, across platforms."[1] Steam lists the game as Single-player.[2]
So there is no co-op zoo building with friends. What you can do with other players is share creations and, in Franchise mode, trade animals.[1][3]
